The Perfect Summer Treats
Summer is here and with it comes long, hot days! Here are some of our favorite treats to share in the summer time with friends and family:
Buttermilk Peach Pops
- ¾ cup of whole buttermilk
- ½ cup of honey
- ¼ cup of heavy cream
- ¼ tsp of salt
- 3 ripe peaches, peeled and diced
- Popsicle molds
Blend together the buttermilk, honey, heavy cream, salt and 1 ½ cups of the peaches in a blender until everything is completely smooth. The remaining peaches can be finely chopped and added to the mixture after you are done blending to add texture to the popsicles. Fill your popsicles molds, but leave some space at the top for the popsicles to expand. Freeze until popsicles are all firm. This can take about 6-8 hours. Once ready, run the molds under hot water to loosen and remove. Enjoy!
Blackberry Peach Cobbler with Pecan Streusel
- Streusel
- ¾ cup of light brown sugar
- ½ cup of melted butter
- 1/8 tsp. of salt
- 1 ½ cups of all-purpose flour
- 1 cup of chopped pecans
- Filling
- 4 cups of peeled and sliced peaches
- ½ cup of granulated sugar
- 3 Tbsp. of all-purpose flour
- ¼ tsp. of ground nutmeg
- 2 cups of fresh blackberries
Start by preparing streusel. Stir together the light brown sugar, melted butter, and salt. Add in flour and pecans until well blended. Let stand for 20 minutes or until firm enough to crumble.
Next prepare the filling. Preheat your oven to 375 degrees. Mix together the sliced peaches, sugar, flour, and nutmeg in a saucepan and bring to a boil over medium-high heat. Reduce to medium, and boil for 6 to 7 minutes until juices have thickened. Once thickened, remove from heat and add blackberries. Add mixture to a greased 9-inch baking dish and top with crumbled streusel. Bake at 375 degrees for 30-35 minutes or until golden brown.
